Full integral, flat ground, K tip Santoku chef knife. Hand forged from 1 1/2” round bar 52100 steel, and fully hardened. The blade has been acid etched to reveal the grain of the steel. Hidden tang, Fiddleback maple handle which has been heirloom fit (slightly oversized than the bolster). Resting on its edge, the profile is flat from heel to 5” up, then curves till tip is about .200 off cutting board. A large knife, the edge is very thin and extremely sharp. Ideal for preparing large amounts of vegetables and raw meats. Not recommended for bones and walnut shells. Carbon steel, will patina with use and will rust if not cared for, I recommend butcher block oil. Maintain edge with 3000 grit stone or finer. Leather strop is recommended, or a fine grit ceramic rod.
